Homemade granola, The perfect Mother's Day breakfast. All mummies deserve breakfast in bed for this one day that is in honour of them.I personally LOVE granola and have been meaning to make my own for ages. It is something that your LO can get involved in and best made in advance which means you have a fun activity to do a few days before and can be ready to be brought to you in bed on the day! ‘Click here’ for the recipe I used.

I didn't have enough honey so used malt extract and honey which is delicious. A good tip to save on sticky pans is to put the jars of honey/malt extract into boiled water then it's easy to pour out. Anything for an easy life! I threw everything into a bowl and Florence took great delight in stirring it for me. (Take deep breathes when they start flicking it everywhere this recipe makes loads; just have a hand held hover at the ready!)

Once all the ingredients have been measured, put them all into a bowl together, mix then spread out onto a baking tray (I used the tray that came with the oven as advised). Spread evenly and roast for 20 minutes

Granola close-upTake out of the oven and turn the mixture. Put back in for another 20 minutes. Take out of the oven and cool.

Once cooled put the now ready to eat granola in an air tight container

This is now ready to be used with yoghurt, as a snack or any other way you would like.

I served it on top of Greek yoghurt with raspberries and blueberries with a drizzle of honey-absolutely delicious.
