Quick and Easy Shortbread: I have to admit they are my very favourite biscuits and I can't believe I've never made them before. I had a few girls coming round with their toddler boys for a play date & didn't have many exciting ingredients but luckily these are store cupboard items...
Ingredients
125g/4oz butter
55g/2oz caster sugar
180g/6oz plain flour
Equipment Baking tray Cookie cutters Cling film Parchment paper
Method Heat the oven to 170C/340F/Gas 5
Beat the butter and the sugar together until smooth
Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick. I rolled the paste in cling film to condense the mess
Cut into rounds using the cookie cutter or cut fingers and place onto a baking tray. Sprinkle with icing sugar and chill in the fridge for 20 minutes
Bake in the oven for 15-20 minutes, or until pale golden-brown
Set aside to cool on a wire rack
I'm delighted to say the biscuits were just divine! I made smaller biscuits for the children in heart & star shapes and cooked them for just 7 - 10 minutes. Enjoy - Michelle x
