Banana bread I LOVE banana bread, so when I saw 3 very ripe looking bananas that were not going to be eaten because I hate them when they go brown, I thought this was the best use for them.
I have never given Florence banana bread before and this recipe is extra special because it has chocolate chips in! Naughty-but very nice.
1/2 cup butter 1 cup white sugar 1 1/2 cups all-purpose flour 1 teaspoon baking soda (I didn't have any so I used self raising flour instead of all-purpose) 1 teaspoon salt 3 very ripe mashed bananas 1-2 teaspoons pure vanilla chocolate chips
Method... Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan. (This can be made in any size pan or muffin tins just adjust the baking time) In a large bowl, cream the butter and sugar and add vanilla. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Stir in the chocplate chips (try not to eat all the mixture like I did!). Pour batter into prepared pan. Bake in preheated oven for 60 minutes, or until it tests done with a toothpick.
I can't believe how well it turned out, ususally anything I make ends up flat as a pancake so it is definately a fool proof recipe!
