Cheesy courgette muffins


Cheesy courgette muffins I am always on the look out for quick to make, healthy snacks for Florence. I am not a planner so what I tend to do is look in the fridge, see what I have got then put the key ingredients into google and see what comes up! Today my key word was 'courgette' and this amazing recipe popped up, so good I had to share...



100 grams plain flour 50 grams cheddar cheese (or parmesan - grated) 1 teaspoon baking powder 1 pinch of salt and pepper to taste 1 small courgette (grated) 1 medium egg ( I didn't have any eggs so left it out) 1 tablespoon extra virgin olive oil 75 ml milk


Preheat oven to 180 C/350 F degrees. In a large bowl sift flour, baking powder, grated cheese, salt and pepper. In another bowl whisk egg. Then add courgette, milk and olive oil. Add to dry ingredients and mix all ingredients well. 20130423-191058.jpg Spoon mixture into greased muffin holes and bake in a preheated oven for 20-25 minutes. 20130423-191107.jpg It's so easy, and even though mine were missing the egg, they turned out great. Florence ate one.. Hurrah! 20130423-191126.jpg I tried one a minute ago cold and it was just as delicious-this recipe is going on the picnic list for sure.
