Mary Poppins Curried Sweet Potato Soup: Perfect for mummies on the move, it's filling, tastes amazing and really easy to make.
Michelle and I took Florence and Oliver to our friend Ellie's house for lunch. Ellie got her nickname "Mary Poppins" years ago-she is and does everything perfect in every way!
We smelt the soup before it was popped down in front of us, I swear there is something addictive in it, the taste was even better. After a couple of mouthfuls I was already asking for the recipe, so here it is guys, it will not disappoint!
Ingredients 4 large sweet potato (cubed) 1 large onion (chopped) 3 cloves of garlic (crushed) 1 yellow or red pepper (chopped) 1 table spoon madras curry powder (I used madras curry paste) 1 can coconut milk 4 cups vegetable stock Little vegetable oil 2 tea spoons of sugar 1 cup frozen peas
Method Heat oil and cook onions for 5 minutes or until translucent. Add crushed garlic and cook for 1 minute.
Add chopped peppers and curry powder. Cook for 1 minute or so. Add potatoes and 2 cups of stock. Simmer for 5 minutes.
Add coconut milk, sugar and stir. Bring to boil, add remaining stock and reduce temperature to simmer until the potato is cooked.
I like mine a little chunky so I take out about a quarter of the mixture before whizzing it and the add the chunky bits back in. I used a sieve to do this with a bowl at the ready, then put it back in after it was blended.
Add the cup of frozen peas to the soup and leave for 10 minutes before serving
Voila! Delish soup that looks good tastes good and requires no actual effort!
