Sourdough pizza

Sourdough pizza I used what I had in the fridge and food cupboard. This is a sauce I make often, usually for pasta. Florence loves it so thought it would be nice on the pizza dough.

Ingredients for topping 1 tbsp olive oil Half an onion 1 clove of garlic 1 punnet of fresh tomatoes cut in half/ or a can of chopped tomatoes 1 tbsp crunchy peanut butter (leave out if you don't like it) Half of a small bunch fresh corriander-chopped 100ml water 1 tbsp tomato purée Salt and pepper to taste

Method

Fry the onion and garlic in the oil for 5 minutes till they go transparent. Add the tomatoes and stir for another 5 minutes. 20130421-113742.jpg Then add the tomato purée and peanut butter and coat the tomatoes and onions. Pour over the water, if it's too wet simmer until its reduced. Now add the coriander, stir and put to the side.

What to do with the sourdough

Get a 10" round flat oven dish and rub olive oil sparingly over the entire surface.

20130419-212239.jpg I then placed my ball of sourdough in the middle and with a rolling pin spread over the dish. I did it right to the sides, it really doesn't have to be neat, you can just use your fingers if you like.

Should be about 2cm thick.

20130419-212213.jpg Then pour the sauce over the top, 20130419-211257.jpg add some grated cheese 20130419-212000.jpg and put into a pre heated oven at 180 degrees.

It will take about 30 minutes but you will know its ready when the cheese is really bubbling.

Once it's ready take it out of the oven and cut into slices. It's great on its own and for Florence I cut into small squares and she loved it!

Again, make the sauce with whatever you like, it will work with pretty much anything.
