One Pan Breakfast:

One Pan Breakfast: Save on the washing up & get lots of brownie points with this delicious One Pan Breakfast. Hubby has a week off work so we can spend some time together before the new baby comes. He has been so busy the week leading up to his holiday that I decided to leave him in bed & treat him to a special cooked breakfast. I had seen Jamie Oliver cooking this & thought I'd save on the washing-up & give it a whirl, It was delicious...One Pan Breakfast

Ingredients mushroom bacon tomato sausage 3 egg Bread (for toast)

Equipment Use a large frying pan, preferably non-stick All in & then the eggs...

Method Preheat the frying pan on a high heat while you gather your ingredients & if you want to cook the top of the eggs, turn the grill on Tip: If you don't have all of the ingredients improvise with what you have in the fridge Slice your sausages in half lengthways and pat them out flat so they cook quickly. Place into the pan at one side On the other side, put tablespoon or so of oil and place a pile of mushrooms over it which can be sliced or whole Shake the pan about a bit to coat the mushrooms and season with some salt and pepper Push to one side and then lay some slices of bacon and halved tomatoes in the pan Cook for a couple of minutes until the bacon is crisp and golden Shake the pan a little and turn the bacon over Pop your toast into the toaster This breakfast will look authentically rustic, shuffle everything around so it's mixed together & add 2/3 eggs The whites of the eggs will dribble in and around the sausage, bacon, tomatoes and mushrooms Turn the heat down a little at this point. Cook for another 1 or 2 minutes until the yolks are slightly soft or to your liking TIP: If like me you your fussy & prefer your egg yolks to be pink on top, spray with oil (I use spray-lite) & pop under the grill for a minute or two until they turn a beautiful pinky colour but remain wobbly The breakfast should just slide out like a giant breakfast frisbee, ready to be devoured Pretty breakfast table My hubby isn't a tomato fan so I left them out of this recipe & made him beans instead, it was quick, easy & tasty, I will certainly make it again, Enjoy!
