Parsley vinaigrette

Parsley Vinaigrette I hate wasting herbs, I always buy the biggest bunch because I love the smell in my kitchen and actually prefer the look of them to most flowers. BUT they do not last long and most recipes only require a small handful. So when I bought this gorgeous Parsley I was determined not to waste it! Vinaigrette is a great way to use up left over herbs, and you get a gorgeous taste-better than supermarket bought! 20130823-125150.jpg Ingredients… 1/2 cup of chopped fresh parsley leaves 1/2 onion (big) 3 garlic cloves, more if they are small 1 cup olive oil 1 teaspoon sugar (I also added a large squirt of honey which made it perfect!) 1 teaspoon salt 1/2 cup vinegar 20130823-133556.jpg Method… Blend all the ingredients in a blender of food processor. 20130823-125136.jpg Work until its homogeneous. 20130823-125144.jpg Because this Vinaigrette is so tasty, you can serve it with a pretty simple meal. After getting back from France I have continues getting lots of lovely vegetables including lots of tomatoes, most definately 'feel good food'. 20130823-125158.jpg I always keep glass jars from pasatta sauce because they are great for decanting sauces and liquids into, but any jar will do.
