Really cheesy popcorn Michelle organised a wonderful Baby shower at South Lodge Hotel for our good friend Lucie. As a gift for everyone to take home, Michelle filled little jars with Popcorn Kernals with a little tag saying 'About to pop!' very cute. So I put it on the kitchen side when I got home-wishing I had a microwave to cook them, I had never done it before. After I had put Florence to bed I started flicking through my Good food magazine and came across this recipe! I did not even realise you could cook popcorn in a pan... I clearly have never lived. Ingredients... 1 1/2 tbsp vegetable oil Extra for shaking 125g popcorn kernels 325g grated cheddar 1/2 tsp Dijon mustard Few pinches cayenne pepper Method... Heat oil in a large saucepan, add the corn and shake the pan coating all the kernels. Cook over a medium heat until the corn stops popping, about 5-10 minutes, shaking the pan every so often. Take off the heat and sprinkle with a little salt. In a separate pan put the cheese, mustard and pepper, heat gently until melted and bubbling. Drizzle over the popcorn and mix well until completely coated. Rub hands with a little oil and coat all the cheese covered corn. Place on a try with parchment then leave to cool. (I just used a large bowl) Store in a big jar. This is not a healthy snack at all but it tastes amazing and is a great snack for parties! Enjoy!
