Red Pepper marmalade


Red Pepper marmalade I still had half of my box of peppers to use and our lovely friend Karen gave me this great recipe. 20130917-093337.jpg Ingredients... 1tsp olive oil 1 onion, chopped 3 red peppers, cut into thin slices 4 red chillies, cut into thin slices 3 garlic cloves, sliced 2 sprigs of thyme Tsp honey Salt and pepper to taste Method... Heat a pan with the oil Add the onions and garlic After 5 minutes you can add the chillies, pepper and thyme. 20130917-093317.jpg Let this all sweat down until the peppers look nice and soft- it took mine about 30 minutes! 20130917-093324.jpg Season to taste, stir in the honey and cool on low heat for another 5 minutes. Turn off the hob and put to one side. I put mine into a sterilised jam jar, but any jar will work. 20130917-093331.jpg I have used it all up already, on cous cous, with cheese and biscuits or even just a few spoons through some pasta is delicious!
