Mummies must-have.. COC!


Mummies must-have.. COC! Sorry I couldn't resist it mummies, he he... Being busy mummies we have to share our secrets. Daisy popped in & wanted to know how I had managed to make a butternut squash soup by 10.30 in the morning, it's the COC - Carrot, Onion & Celery. I cook a huge batch & freeze it down in small batches. When I want to make a soup, stew or meat sauce I just pop it into the pan on a low heat with a tiny drop of water. It really does save so much time, injects the most gorgeous base flavour to most dishes & saves on the washing-up too! 20130929-121947.jpg Ingredients A few handfuls of carrots A whole celery 2 large white onions 1 packet of small zip lock bags Olive oil for frying

20130929-121907.jpg Fry on a gentle heat in a large non-stick pan with Olive Oil for 10 minutes until the vegetables are translucent

20130929-121933.jpg I portion 2 & 1/2 large spoonfuls into each bag & pop into the freezer

TIP: You can either take the COC out the night before you need it or if you forget pop the frozen block into a sauce pan with a few tablespoons of water & heat gently, Voila! Michelle X
