Perfect Roast Chicken every time: This perfect roast chicken 'every time' is simple, delicious & trust me on the seasoning, even my mum admits it makes a HUGE difference to the flavour. Roast chicken perfect every time! The only issue we have in our house is the chicken making it to the table, Oliver gets so excited when I roast a chicken he keeps eating it whist I'm carving!20131019-052645.jpg Ingredients 1 (2.25 to 2.7kg) whole chicken (preferably from a local butcher) Salt Freshly ground black pepper 1/2 bottle of white wine (Only use wine you would happily drink) Peppercorns Bay leaves Olive oil 20131019-052735.jpg Method Preheat the oven to 180°c Liberally season the chicken inside Place the chicken into a large roasting tin Pour in 1/2 bottle of white wine Add the bay leaves & peppercorns Place the lid on or cover with foil Roast the chicken for 1 hour Remove from the oven & drain the juices into a glass jug (gravy recipe to follow tomorrow) 20131019-052756.jpg Pour olive oil over the skin of the chicken & liberally season Return to the oven for a further 1/2 hour without the lid or foil, until the juices run clear when you cut between a leg and thigh 20131019-052833.jpg When cooked remove the chicken & cover with aluminium foil for about 20 minutes Portion the chicken into breast, thigh, leg & wing portions TIP: If you cut the breast portions in half you have 4 portions of breast meat & 4 portions of dark meat, thigh & leg and the wings

The chicken is succulent, tasty & very simple! I tend to use 1/2 of the chicken for dinner the night I cook it & the other 1/2 to make my fabulous roast chicken pie, recipe to follow tomorrow - Michelle x
