Fig, pistachio & honey balls I love the Miss wallflower Candy energy balls, and for a while have been searching for a recipe similar because I wanted to have a go at making them. So I was thrilled when flicking through this months Good Food Magazine I came across this recipe! Makes 20-25, Prep 25 minutes, plus chilling, NO COOK. Ingredients... 100g shelled, unsalted pistachios 50g blanched almonds 100g Medjool dates (These are fresh dates-I did not know this) 200g Ready to eat dried figs 1-2 tsp Finely grated orange zest 1-2 tsp Orange flower 2 tbsp fragrant clear honey 1/2 tsp Ground cinnamon Cocoa for dusting Get the dates and figs and chop them up as much as possible so that it is easier to blend, they are quite sticky! Blitz the almonds and pistachios in a food processor using the pulse button, or by hand with a kitchen knife until finely chopped but not powdery. Put the dried fruit in the blender and blitz till a smooth paste then add the orange zest, honey, orange blossom and cinnamon and whizz again until just combined. Tip into the bowl with the chopped nuts and mix until thoroughly combined. Using your hands, roll the mixture into cherry sized balls and place on a baking parchment-lined tray. Cover and chill until firm. Just before serving, lightly dust the balls in coco, if desired. Per ball (25) 70kcals Will keep in the fridge for up to 2 weeks.
Would be great for Christmas-especially big parties!! They taste so amazing and are great for those with a sweet tooth.
