Fig, pistachio & honey balls

Daisy

Fig, pistachio & honey balls I love the Miss wallflower Candy energy balls, and for a while have been searching for a recipe similar because I wanted to have a go at making them. So I was thrilled when flicking through this months Good Food Magazine I came across this recipe! Makes 20-25, Prep 25 minutes, plus chilling, NO COOK. 20131101-204313.jpg Ingredients... 100g shelled, unsalted pistachios 50g blanched almonds 100g Medjool dates (These are fresh dates-I did not know this) 200g Ready to eat dried figs 1-2 tsp Finely grated orange zest 1-2 tsp Orange flower 2 tbsp fragrant clear honey 1/2 tsp Ground cinnamon Cocoa for dusting 20131101-204326.jpg Get the dates and figs and chop them up as much as possible so that it is easier to blend, they are quite sticky! 20131101-204340.jpg Blitz the almonds and pistachios in a food processor using the pulse button, or by hand with a kitchen knife until finely chopped but not powdery. 20131101-204353.jpg Put the dried fruit in the blender and blitz till a smooth paste then add the orange zest, honey, orange blossom and cinnamon and whizz again until just combined. 20131101-204408.jpg Tip into the bowl with the chopped nuts and mix until thoroughly combined. 20131101-204422.jpg Using your hands, roll the mixture into cherry sized balls and place on a baking parchment-lined tray. Cover and chill until firm. Just before serving, lightly dust the balls in coco, if desired. 20131101-204436.jpg Per ball (25) 70kcals 20131101-204453.jpg Will keep in the fridge for up to 2 weeks.

Would be great for Christmas-especially big parties!! They taste so amazing and are great for those with a sweet tooth.
