Egg free banana bread
I always have a few bananas that get left until they are brown. Some people like them like that but I definately do not!
So when I had 4 that had gone soft and brown I thought banana bread would be the perfect thing to make... I had no eggs so went on a search through the internet for a recipe that contained ingredients that I had in my cupboard.

4 very ripe bananas, mashed
1 1/2 cups all-purpose flour
1/2 cup butter, melted
3/4 cup brown sugar
1/2 cup milk or 1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla essence
1 pinch salt
Directions…
Preheat oven to 350ºF/180ºC.
In a mixing bowl, combine mashed bananas with butter.
Add in milk, vanilla, and mix.
Add in sugar, baking soda, salt, and mix.
Add flour last and mix until just combined.
Pour mixture into a greased and floured bread loaf pan.
Bake for 1 hour or until a wooden pick comes out clean.
Allow to cool before removing from pan.
It is absolutely delicious and a fool proof recipe... as I have said before, Michelle is most definately the baker out of the two of us, so was pleasantly surprised at how yummy it was.
