Healthy breakfast Breakfast is apparently the most important meal of the day. I have never been a fan and usually opted for a slice of toast out of ease. Florence LOVES toast but I definately should be having a healthier option!

I have to admit I love throwing things together adding a bit of this and a bit of that, it is how I cook in general. I layered fat free greek yoghurt with a flaxseed mix, blueberries, nectarine chopped up, sunflower seeds, a squirt of honey then a sprinkle of raw Acai powder! 20140728-085433-32073009.jpg It was so nice I have had it every day since! Creamy, crunchy and juicy all in one. Everyone usually has some sort of nuts or seeds that need using in their cupbard! IMG_5091.JPG

Ditch the bread and give this a go.... it will give you a great energy boost to your day!

Courgette & tomato soup

Courgette & tomato soup Anothe day another soup... the rain came down and so I dived into the fridge to see what I could make out of my salad ingredients! This soup is quick, easy and healthy and most of all Flossie loved it. 20140411-070526.jpg Ingredients... 1 tbsp butter 2 onions, chopped 1kg courgettes, sliced 1kg tomatoes, chopped 2 tbsp plain flour ½ tsp turmeric 2l chicken or vegetable stock from cubes crusty bread, to serve (optional) 20140411-070506.jpg Method... Melt the butter in a large pan, add the onions and courgettes, and cook for 5 mins on a medium heat, stirring occasionally. Add the tomatoes and flour. Cook for a couple of mins, stirring around to stop the flour from becoming lumpy. Add the turmeric and stock, cover and simmer for 30 mins. Purée with a stick blender, then sieve if you want a really smooth texture. Serve hot with crusty bread, if you like, or chill, then freeze for up to 2 months. 20140411-070514.jpg It tastes amazing, when I aske djon what he thought was in it he was pretty surprised that it was 90% tomatoes and courgette!

Dancing in the rain: Dancing in the rain is a childish fantasy that we all cherish, the feeling of warm rain droplets on your skin is truly unforgettable. Luckily Oliver loves the rain & where possible we make the most of the downpour, usually after the rain has stopped.20140527-221415-80055122.jpg I bought some waterproof trousers which I pop over Oliver's jeans & tuck into his welly boots, this stops his trousers getting wet & saves me on the washing, when we remember to put them on... 20140527-221416-80056640.jpg Seeing a puddle through Oliver's eyes has shown me that a puddle can be mysterious, it's filled with the sky, some leaves, a few muddy stones & your own reflection. I now try & take the time to slow down & enjoy watching him play with this small pool of water, it's so much fun. 20140527-221415-80055899.jpg It's a simple free activity & let's be honest, there's plenty of rain about at the moment so lots of puddles to play in. Lemon & coriander dressing It is summer and I am weening myself away from the soups. I made myself a nice healthy salad and like to make my own dressings...

20140513-133855.jpg INGREDIENTS... Juice of 2 lemons 1 tbsp rapeseed or extra virgin olive oil 3 tbsp vegetable oil 1 medium bunch of coriander 1 tbsp caster sugar 20140513-133847.jpg METHOD... Put all the ingredients in a blender and blend them together. It is so delicious and could be used with lots of different meals like curries. Experiment with whatever you have in your cupboard... it will always taste better than shop bought.
