Courgette & tomato soup


Courgette & tomato soup Anothe day another soup... the rain came down and so I dived into the fridge to see what I could make out of my salad ingredients! This soup is quick, easy and healthy and most of all Flossie loved it. 20140411-070526.jpg Ingredients... 1 tbsp butter 2 onions, chopped 1kg courgettes, sliced 1kg tomatoes, chopped 2 tbsp plain flour ½ tsp turmeric 2l chicken or vegetable stock from cubes crusty bread, to serve (optional) 20140411-070506.jpg Method... Melt the butter in a large pan, add the onions and courgettes, and cook for 5 mins on a medium heat, stirring occasionally. Add the tomatoes and flour. Cook for a couple of mins, stirring around to stop the flour from becoming lumpy. Add the turmeric and stock, cover and simmer for 30 mins. Purée with a stick blender, then sieve if you want a really smooth texture. Serve hot with crusty bread, if you like, or chill, then freeze for up to 2 months. 20140411-070514.jpg It tastes amazing, when I aske djon what he thought was in it he was pretty surprised that it was 90% tomatoes and courgette!

Easy Pizza


Easy Pizza Life is pretty hectic right now..setting up an incredible business, buying a new house and a manic toddler running me round in circles. It is all wonderfully crazy but I am still determined not to go "ready made meal" mummy just yet. So here is my compromise... 20131025-113020.jpg Ingredients... For the tomato sauce 1 onion 2 cloves garlic 1tbsp olive oil 1 430g jar of chunky passata Half a tube of tomato purée Salt and pepper to taste 20131025-112711.jpg For the topping 1 can of artichoke hearts Mini portabello mushrooms Jalapeños (for daddy) Handful of black olives Two big handfuls of cheddar cheese grated 20131025-112901.jpg For the base Two ready made bases from sainsburys-yep that's why it's easy. Method... Chop up the onion and garlic and sauté in the oil for 5 minutes Add the chunky passata and tomato purée, 20131025-112814.jpg season to taste, stir an take off the heat. 20131025-112841.jpg While this is cooling slightly chop up the topping however you like. Get your two bases and cover with the tomato sauce. 20131025-112921.jpg Sprinkle with cheese Add the topping 20131025-112956.jpg Place your pizzas in a pre heated oven at 180C They won't take longer than 20 minutes but keep an eye on them. When all the cheese has melted and is bubbling remove from the oven and serve.

It's really easy and great for when you have guests round for a last minute dinner!
